What It Is

The tiny fragrant seeds scraped from inside the pod — pure vanilla flecks, often suspended in a little pod paste. Maximum aroma and those signature black specks, with none of the pod's woodiness.

How to Use

Stir straight into anything, hot or cold — no infusing needed. Made to show off: panna cotta, custards, whipped cream, glazes and anywhere the seeds are the star.

How to Store

Keep the jar or pouch airtight in a cool, dark place. Cap tight after every use to hold the aroma. Used well, it keeps its punch for one to two years.

Tip for Home Cooks

Caviar is your “no-cook” hero. Because it needs no infusing, stir it into finished creams and cold desserts right before serving for the freshest aroma and best flecks.
